Snowballs, the petty in pink coconut covered treat, are one of my most memorable childhood treats and I am sure that Wareings snowballs still have a secure place in the memories of many growing up in the ’80s and ’90s. It was one of my first recipes posted in this Blog since then I have come across several variations of snowball recipes, including those dipped in Fanta and filled with whipped cream. I shared some of my memories of snowballs in the September issue of Woolworths Taste Magazine along with other foodies who shared their variations of the beloved snowball.

Eggless South African Snowballs
This recipe has come about from much trial and error. I have tried
several recipes using egg substitutes like yogurt, apple sauce and
bananas. The best results have come from the use of butter and cream.
The fat content in cream binds with the flour and butter to give a
crispy crust and soft center, making perfect eggless snowballs. The
cream should not be whipped, simply add in liquid form. In this version
of the recipe I used icing sugar instead of granular sugar, it results
in a smoother texture. Something I’ve learned after making Danish butter cookies and chocolate shortbread.

Ingredients
- 1/2 cup butter (at room temperature)
- 1/2 cup icing sugar
- 1/2 cup cream
- 2 1/2 cup flour and 2 teaspoons baking powder or 21/2 cups self-rising flour
- pinch of salt
For the syrup
- 375ml Jam (you can use the jam of your choice. I have used strawberry jam)
- 1/2 cup of water
- 2 cups desiccated coconut
- pink food coloring
- 3 tablespoons jam for spreading
For the icing
- 2 tablespoons butter
- 1/2 cup of icing sugar
Instructions
- Preheat oven to 150 degrees Celsius
- Combine soft butter and icing to form a smooth mixture.
- Add cream, then slowly sift in flour.
- Combine to form a soft dough.
- Shape dough according to the recommendations in the snowballs recipe
- Place on a baking tray then place in the oven.
- Bake for 20-25 minutes until slightly brown.
- Remove from oven, allow to cool.
- Make the jam syrup by combing the water and jam.
- Prepare the icing
- Sandwich with icing and jam then dip in jam syrup before coating with pink desiccated coconut.
- Enjoy with a cup of tea
