How to Make Tart Pastry

Jam Tarts were the only Tart ever made by Amma. I still use this Tart Pastry Recipe for the base of all my tart recipes.To make Tart Pastry you will need flour butter, salt, sugar and ice water. These are basic ingredients found in almost any kitchen but the secret to perfect pastry lies in the method of making it.

One of the most important factors in making perfect pastry dough is to maintain the correct  temperature of the butter, this means not handling the dough too much or using more flour than is needed. Unlike most cookie recipes, the butter for tart pastry should be cold. I also recommend using butter instead of margarine whenever possible. Pastry made from Butter has a much softer texture than that made with margarine.

 Ingredients for Pastry

  • 1 1/4 cups flour
  • 8 Tbsp. unsalted butter (chilled )
  • 3-4 tablespoons ice water
  • 2 Tbsp. icing sugar
  • Half teaspoon salt

1. Start by sifting the flour, sugar and salt. Add the butter then work into fine bread crumb mixture. If you have a mixer then use this, but it can also be done by hand. To get the crumbs into a fine texture use a pastry cutter or butter knife.

2. Add ice water one tablespoon at a time to work into soft pliable dough.

3. Roll the dough into a ball, wrap in cling film /plastic wrap. Refrigerate for a minimum of 1 hour up to 1 day.

4. When ready to bake roll out pastry into desired shape then bake.( See other Tart Recipes -listed below-for baking instructions…this may vary depending on the tart filling).
