Coconut wheels are a decorative version of coconut ice. It is made by making two different colors of coconut ice, rolled flat then rolled and sliced. It makes for an attractive addition to any Diwali parcel.
How to Make Coconut Wheels
Prep time: 10 minutes
Refrigeration time: 2-3hours
Total time: 130 minutes
Yield: Serves 15x 3cm diameter coconut wheels.
Step 1. Use the ingredients and method used in the Coconut Ice Recipe plus additional cup of icing sugar for dusting and shaping the coconut wheels.
Step 2. Add desired color agents.
Step 3. Roll the coconut ice mixture into balls. Divide the mixture into desired colors. Roll each ball flat between two sheets of parchment / baking paper. Dust the paper with icing sugar to avoid the mixture from sticking to the paper.
Step 4. Roll until 0,5cm thick sheets are formed. Layer the different colored sheets then roll. Use parchment paper to form a tight roll. Place in the fridge for 2- 3 hours or at best overnight. Slice into discs.
