Canned sardines are often overlooked as the cheaper –inferior alternative to tuna – yet sardines have much more to offer than just their affordable price tag. Canned sardines like most fish products are rich in omega -3 fatty acid and are a source of protein making them a healthy food choice for salads, sandwiches or pasta dishes. Sardine sandwiches were one of Amma’s contingency lunches i.e. lunch on Fridays -her primary day for housekeeping. Amma’s sardine sandwiches always contained finely sliced onions, tomatoes, sometimes cheese for my sisters and I and chilies for my father. Delicious as Amma’s sardines sandwiches was – variations to this simple sandwich are endless.

1 can Sardines | 1. Drain off the excess oil from the can of sardines. |
half onions sliced fine | 2. Remove the bones and other unwanted portions. |
desired limit green chillies | 3. Slice onion, chillies and tomatoes fine. Add to sardines. |
half tomato diced | 4. Add salt and pepper, Drizzle with olive oil. Mix. |
