Although macaroni always had a place in Amma’s shopping list – it was not until the early nineteen nineties that she‘tentatively’ began  cooking spaghetti. The first time I ever encountered spaghetti – was while reading The Magic Pasta Pot by Tomie dePaola. I must have been around 8 years old at the time – after reading the book I assumed spaghetti might have tasted like vermicelli – but it was only 2 or 3 years later that I got to taste spaghetti.  Naturally Amma’s spaghetti was ‘curry pasta’.

This recipe is inspired by Amma’s curry pasta –  a spicy – simple  alternative to Bolognaise sauce-

Spicy Mince Spaghetti Recipe

Cook time: 20 minutes
Yield: Serves 2 people

Ingredients

    • 250 g mince
    • 3 cloves garlic
    • 1 tablespoon oil
    • 100ml sour cream
    • Half teaspoon salt
    • Half teaspoon garamasala
    • 1 teaspoon masala or chilli powder or dried chilli flakes
    • 100ml water
    • Spaghetti

     

Cooking Instructions

    1. Heat a pan on medium heat.Add oil. Add mince. Fry for 5-7 minutes until slightly brown. 
    2. Add crushed garlic. Add garamasla and chilli powder. Braise for 2-3 minutes on low heat. 
    3. Add 200ml water. Cook for 5 minutes then add sour cream. Simmer on low heat while the pasta cooks 4. Boil the pasta as per instructions on the package. Once the pasta is cooked. Serve with the mince sauce.
