Butternut Lentil Burgers did not feature in Amma’s recipe collection-but the purpose of this Blog- is also to create new recipes inspired by Amma’s frugal ways. Spicy Butternut Lentil Burgers, is a recipe I came up with to use the excess butternut squash in my fridge. I love butternut – unfortunately it is rarely available in my current home city – whenever I do see them – I feel the need to stock up!
This is quite a simple lentil burger recipe. For this recipe I have used Black Lentils (aka Breyani Dhal)-you can used canned lentils or ones that have been pre boiled. This recipe does not contain any eggs. The butternut will help to bind the lentils but this is not enough to make firm burgers. I have used wheat bran and gram flour (pea flour) for this purpose. This Recipe Yields 5 medium sized burgers. I have used 2 and stored the rest in the freezer. Similarly you can wrap the unused ones in Cling wrap-store in the freezer but remember to cook them within three months.
Butternut Lentil Burgers
Prep time: 10 minutes
Cook time: 15 minutes
Total time: 25 minutes
Yield: Serves 5 persons
Ingredients
- ½ cup black lentils
- 1 cup butternut squash
- ½ chopped fresh coriander
- ½ cup Wheat Bran
- ½ cup Gram Flour (Pea Flour)or ground red lentils
- Chopped chilli (use desired limit)
- 1 teaspoon ground ginger and garlic
- 1 teaspoon chilli powder or masala
- 1 teaspoon garam masala
- Salt
Cooking Directions
1. Boil the lentils. Boil Butternut. Smash with a potato masher to form a soft paste like texture.

2. Add chilli powder or masala, salt and garam malsa.
3. Add chopped coriander,ginger and garlic and chopped chilli.

4. Add wheat bran and gram flour. Mix to form a firm yet pliable dough. Shape into balls then flatten.
5. Heat oil in a pan (preferably non stick pan).Fry Lentil burgers until Brown on each side. You can also bake in the oven. Brush a pan lightly with oil then place burgers in it. Bake for 15 minutes at 180 degrees Celsius.
6. Serve a desired. I have served this Lentil Burger with a salad and oven baked sweet potato wedges.
Baked Sweet Potato Wedges

- Wash Sweet Potatoes.
- Cut into wedges.
- Drizzle with olive oil, salt and pepper.
- Place in oven at 150 degrees.
- Bake for 30 minutes or until the sweet potato is soft.
